We like good food and we are competitive and that’s why Ryvita’s PR didn’t have to ask us twice when she was looking for bloggers to enter the Ryvita Blogger Challenge. The challenge was to create a dip that accompanies their Ryvita Thins, crispy flatbreads that are perfect to share with friends and family. As we like getting creative in the kitchen, we instantly jumped towards the fridge to see what dip we could come up with without having to go shopping (that’s our own little side challenge) and a couple of minutes later our Fiery Mint Salsa was born.
It’s fresh, it’s easy to make and it’s the perfect dip for everyone who likes food with a little bit of a kick. If you would like to make our Fiery Mint Salsa yourself, here’s what you need:
- 4 tomatoes
- 1 medium onion
- 2 green chillies
- 3 tsp lemon juice
- 1 tsp of tabasco sauce
- salt and pepper
- ground chilli and garlic
- handful of fresh mint
- olive oil
- cider vinegar
Dice the 4 tomatoes and put them in a bowl. Then add a pinch of sea salt and stir. Finely chop the onion and add to the tomatoes. Now, half and finely slice the green chillies and stir into the mix. Then add the lemon juice to give your salsa a bit of zing, add a tea spoon of cider vinegar and give your dressing a fiery kick by adding a tea spoon of tabasco sauce. Season to taste and add some ground chilli and garlic before giving your salsa a good stir. To finish your dip off, chop some mint and mix it into the salsa. Enjoy!
