Quick and Easy Chinese Vegetable Stir-Fry
Ingredients:
some broccoli
2 carrots
handful of mange tout
half a bag of bean sprouts
some baby corn
1 red pepper
pack of ready-cooked Chinese noodles
3 tsp vegetable stir-fry sauce
dash of dark soy sauce
dash of light soy sauce
Method:
Mix the ready-cooked noodles with some light soy sauce to separate them. Chop up the vegetables to your taste and heat some groundnut oil in a wok until it is smoking. Add the noodles and fry them until they are heated through properly – about 5 minutes. Set them aside and then heat some more oil in the wok and fry the vegetables for about 2-3 minutes, so that they’re cooked but still have a nice crunch to them.
Add 3 table spoons of vegetable stir-fry sauce and a dash of both the dark and soy sauce to season the vegetables and cook it to taste. Then add the noodles and stir-fry to heat them through. Give it all a good stir and plate up.
