My dad has an incredibly sweet tooth, so to cheer him up after a long and busy week at work, we decided to make a baked cheesecake for him. It’s one of his favourite cakes and as it’s incredibly quick and easy to make, it was a good one to rustle up on a Saturday morning.

Quick and easy baked cheesecake – prep time 10 minutes
1000 g quark
100g plain flour
250g butter, melted
250g caster sugar
2 tsp baking powder
2 tbsp vanilla sugar or 2 packs, if you can buy it pre-packed
rind of one lemon
zest of one lemon
1. Mix butter, eggs and sugar until creamy.
2. Add flour, baking powder and vanilla sugar and mix until you’ve got a smooth batter.
3. Stir in quark until you’ve got a light and fluffy mixture.
4. Grease your spring form with butter, preheat oven to 170 C degrees and bake on middle rack for about 1 hour.
Told you it was easy, didn’t I? If you fancy it a little more fruity, why not add some fruit of your choice? I find clementines, cherries, raspberries and blackberries work particularly well.
