Not long now and the summer holidays will be over with the kids back at school or nursery. But hey, there’s still time to make the most summer and take advantage of the last couple of days and what better way to celebrate what’s left of the holidays than enjoying a delicious ice lolly together?
This is a super fruity and equally quick and simple recipe for busy parents and the even better news are that you only need two ingredients to whip them up. For these delicious strawberry and custard ice lollies you only need, that’s right, stawberries and custard, although strawberries can be replaced with most other berries such as blueberries, blackberries or raspberries. So simply pick your family favourite and enjoy.
Strawberry and custard ice lollies
Ingredients:
400g strawberries or berries of your choice
150g ready-made custard
Prep-work:
Wash and hull your strawberries
Method:
1. Purée the hulled strawberries in a food processor or liquidiser and then press your purée through a sieve to remove the little yellow seeds.
2. Stir the ready-made custard into your strawberry purée and mix until smooth.
3. Pour your misture into 6 lolly moulds, add lolly sticks and freeze overnight.
4. To serve, simply dip the moulds briefly in warm water and lift your ice-cream out of the moulds.
